For the cake
  • 150grams self raising flour
  • 125grams caster sugar
  • 1/2teaspoons baking powder
  • 125grams unsalted butter
  • 2 eggs, cracked and lightly beaten
  • 1/2 cup milk, save 4 tsp for later
  • 1teaspoons vanilla extract
For the topping
  • 1 medium lime, zest and juice only needed
  • 100grams white chocolate, broken
  • 150grams ricotta
  • 50grams icing sugar

Description

The combination of creamy white chocolate and zesty lime makes these sponge slices delicious.

Method

Step 1 of 7

Pre-heat the oven to 170°C.

Step 2 of 7

In a mixing bowl, combine the butter with the sugar and vanilla.

Step 3 of 7

While mixing slowly, crack in the eggs and add the baking powder.

Step 4 of 7

Incrementally add the flour and use the milk incrementally if you need to loosen up the dough.

Step 5 of 7

Once the dough is ready, transfer to a buttered loaf tin and bake in the oven for 30 minutes.

Step 6 of 7

While the cake is baking, melt the chocolate in a pan and then remove from the heat and combine with the ricotta, icing sugar and 2 tsp of lime juice.

Step 7 of 7

Once the cake has cooked and you allow it to cool, cover with the chocolate cream cheese and garnish with lime zest. Allow to set in the fridge for 2 hours before serving.
