- 350grams plain flour
- 1/4teaspoons salt
- 1tablespoons baking powder
- 140grams cold unsalted butter, cubed
- 160grams brown sugar
- 1tablespoons brown sugar
- 2 eggs
- 220milliliter milk
- 3/4teaspoons vanilla
- 1 lemon, juice and zest
- 175grams frozen blackberries
- 2tablespoons raw sugar

Description
A tender and moist cake, bright with lemon and dotted with jammy blackberries!
Method
Step 1 of 7
Macerate blackberries with 1 tbsp brown sugar and a squeeze of lemon juice.
Step 2 of 7
Mix the flour, salt and baking powder into a large bowl. Rub in the butter until it resembles breadcrumbs and then stick the bowl in the freezer for 10 minutes to let the butter firm up again.

Stir the sugar into the flour mixture. Beat together the eggs, milk, vanilla, lemon zest and juice, then stir into the dry mixture until you have a thick batter.

Preheat the oven to 180C.

Pour half the batter into a baking paper-lined 20cm round tin. Sprinkle on half of the blackberries and drizzle some of the juices, then top with the rest of the batter and the rest of the blackberries. Sprinkle raw sugar on top (I only had brown so it stayed in clumps on top , so do use raw if you can).

Bake at 180 C for about 1 hour until a toothpick inserted into the centre comes out clean or with a few crumbs. Let cool in the tin.
