  • 75grams light brown sugar
  • 3 small granny smith apples
  • 1tablespoons lemon juice
  • 125grams soft butter
  • 220grams caster sugar
  • 1tablespoons ground cinnamon
  • 1tablespoons vanilla extract, or paste
  • 3 eggs (at room temperature)
  • 150grams self-raising flour
  • 35grams plain flour
  • 60milliliter milk

Super easy but a little special and tasty.

Method

Step 1 of 5

Preheat oven at 180'C and grease a 20cm round cake tin and then line base and sides with baking paper.

Step 2 of 5

Sprinkle the cake tin with the brown sugar. Peel, core and thickly slice the apples, place in a bowl and toss with the lemon juice. Arrange the apples over the brown sugar and drizzle over the remaining lemon juice.

Step 3 of 5

Use an electric mixer to beat the butter, sugar, vanilla and cinnamon till light and fluffy / creamy. Add eggs and mix till combined.

Step 4 of 5

Sift both flours together. Use a metal spoon or spatula to gently fold in flours and milk in two separate batches. Once combined spoon mixture over the apples evenly.

Step 5 of 5

Bake for 1 hour and 20 minutes or until golden and tested with a skewer. Once cooked let it stand in the tin for 5-10 minutes then turn over on a serving plate or cooling rack so the cake now becomes upside down and the apple is the top.
