  • 2 sheet frozen shortcrust pastry, partially thawed

Method

Step 1 of 3

Finely grate rind from limes and then juice (you’ll need 1/2 cup). Place lime juice, eggs, sugar, butter and half of the lime rind into a heatproof bowl.

Place the bowl over a saucepan of simmering water but do not let the base of the bowl touch the water. Stir continually for 15-20 minutes until the mixture has thickened enough to coat the back of a spoon, similar to custard. Strain into a jar or container and seal.

Step 3 of 3

For the pastry tarts, preheat the oven to 200°C. Cut rounds from the pastry using a 7cm-wide fluted cutter. Line a 12-hole patty pan with pastry rounds. Bake for 10-12 minutes until golden and cool. Remove cooked rounds and repeat with remaining pastry rounds. When cold, fill with lime curd and decorate with reserved lime rind.
