- 2 cup plain flour
- 1/3 cup self-raising flour
- 2tablespoons icing sugar (to dust)
- 125grams butter, softened
- 1teaspoons vanilla extract
- 1 1/2 cup lemon curd (good-quality)
- 1 lemon, juiced and rind finely grated
- 1 egg
- 1/2 cup caster sugar

Method
Step 1 of 7
Preheat oven to 180°C. Line two large baking trays with baking paper.
Step 2 of 7
Beat butter, sugar and vanilla in a bowl until pale and creamy.

Beat in egg and lemon rind and juice

Sift flours.
Step 5 of 7
Add to the butter mixture and stir until combined.
Step 6 of 7
Halve dough. Roll out one portion between two sheets of baking paper until 5mm thick. Cut out 15 biscuits using a heart-shaped cutter. Place onto prepared trays. Bake for 15 minutes or until firm. Cool on trays. Repeat with remaining dough.
Step 7 of 7
Spoon lemon curd into a piping bag fitted with a 2cm star nozzle. Pipe onto half the biscuits. Top with remaining biscuits. Dust with icing sugar.
