Description
This delicious Ukrainian honey cake is so simple to make and won't dry out thanks to the secret ingredient of sour cream.
Method
Step 1 of 3
Pre-heat the oven to 170°C. Line a large rectangular baking tray with parchment paper. Beat the eggs, sugar and salt in a large bowl with a handheld electric whisk or in a stand mixer for 8-10 minutes until fluffy and voluminous.
Step 2 of 3
Pour the honey into a bowl and microwave for 30 seconds. Whisk the vinegar and baking soda together in a small bowl until fizzy. Add the sour cream, honey and baking soda mix to the egg and sugar mix and beat until just combined.
Step 3 of 3
Sift in the flour and beat for no more than 30 seconds on low speed to combine. Pour the batter into the baking tray and bake for 30 minutes until golden. Leave to cool on a wire rack and slice into squares to serve.
