- 1packets gingernut biscuits
- 3tablespoons Nuttelex, melted (or butter)
- 2 1/2tablespoons lemon juice
- 1 1/2tablespoons water
- 1 1/2teaspoons gelatin powder
- 1 cup icing sugar
- 1 1/2 cup cream
- 340grams cream cheese
- 1 jar lemon curd
- 2 drop yellow food colouring

Description
This is a delicious citrus treat that is nice and fluffy and quick/easy to make.
Method
Step 1 of 7
Crush biscuits in a blender or with rolling pin until fine crumbs. Add the melted Nuttelex or butter and mix together. Put approx 1tbsp of the crumbs at the bottom of your containers/cups.

Using an electric mixer - whisk the cream in a mixing bowl until whipped to peaks. In a separate mixing bowl, whisk the cream cheese until this is smooth. Add the icing sugar and lemon curd and continue to mix together along with a couple of drops of food colouring.

Pour lemon juice and water in a glass bowl and sprinkle gelatin on top. Stir and let sit for 5 minutes.

Heat rested gelatin on high in a microwave for 30 seconds. Stir thoroughly for 1 minute. Let sit (no longer than 3 minutes or this will start to set and give you lumps in mixture).
Step 5 of 7
Once the gelatin mix has cooled, add this slowly into the cream cheese mixture and continue mixing for a minute until combined. Fold in gently the whipped cream to this bowl, until combined.

Spoon (or pipe / ziplock bag) over of the crumb mixture in individual cups. Refrigerate for 2 hours (or overnight)

Serve topped with your preference - whipped cream, berries, mint leaves etc. Enjoy!
