  • 145grams butter, divided, cut into cubes

  • 2teaspoons cinnamon
  • 150grams sour cream (to serve)

Description

Apple cake with a crispy cinnamon streusel topping is a favourite dessert in Ukraine.

Method

Step 1 of 5

Pre-heat the oven to 170°C. Grease and line a 9 inch round cake tin with parchment paper.

Step 2 of 5

Whisk 225g of flour, baking powder and 50g of brown sugar together in a large bowl. Add 115g of butter, cut into cubes and use a knife to cut it into the flour mix, then rub in with you hands to form a breadcrumb like mixture.

Add the cream to a bowl with the beaten egg and tip into the flour. Mix gently to form a dough. Spread the dough out in the cake tin and top with the apple slices, neatly arranged on top.

Step 4 of 5

In another bowl, mix the rest of the brown sugar and flour with the cinnamon and rub in the remaining butter to form a crumbly mixture. Spread on top of the apples and bake the cake for 25 minutes.

Allow to cool, slice and serve with sour cream on top.
