  • 1 cup plain flour
  • 1/2 cup thickened cream
  • 250grams butter
  • 200grams Dark Cooking Chocolate, chopped
  • 200grams Milk Cooking Chocolate, chopped
  • 5 eggs
  • 1 1/2 cup brown sugar
  • 50grams ground hazelnut meal

Method

Step 1 of 6

Melt butter and milk chocolate together in a small pan over low heat. Stir until smooth. Remove from heat.

Preheat oven to 180°C. Grease a deep 23cm diameter cake pan and line base with baking powder.

Whisk eggs and brown sugar together lightly. Add chocolate mixture and stir to combine. Sift flour and hazelnut meal together and fold gently into chocolate mixture. Pour into prepared pan.

Bake for 1 hour or until cooked when tested with skewer. Remove from oven and cool in pan for 15 minutes. Turn out onto a wire rack to cool completely.

Step 5 of 6

Heat cream in a small pan until almost boiling. Remove from heat and add dark chocolate. Stir until chocolate has melted. Cool until just beginning to thicken.

Place cake on a wire rack over a baking tray. Pour chocolate coating over cake and smooth with a spatula. Leave to set, but don't refrigerate. Cut cake into wedges to serve.
