  • 1 1/2teaspoons baking powder
  • 250grams dates, pitted, chopped
  • 1 1/4 cup plain flour
  • 2 teaspoons Woolworths Select full cream milk for caramel frosting
  • 80grams butter, at room temperature
  • 1teaspoons bicarbonate of soda
  • pecan nuts (optional to garnish)
  • 250grams cream cheese, chopped at room temperature (for caramel frosting)
  • 2 free range eggs
  • 3/4 cup brown sugar (for caramel frosting)
  • 1/2 cup caster sugar

Method

Step 1 of 4

Preheat oven to 180°C fan forced. Line 12 holes of a 1/3 cup capacity muffin pan with muffin paper cases.

Combine the dates and 1 cup water in a small saucepan, bring to the boil, boil 2-3 minutes until dates are soft. Remove from heat, stir in bicarbonate of soda. Set aside 15 minutes to cool.

Step 3 of 4

Beat the butter and sugar with an electric mixer until pale and creamy. Add the eggs, 1 at a time, beating well after each addition. Sift the flour and baking powder together over the butter mixture then stir in the date mixture, mix until just combined. Spoon into muffin cases. Bake for 15-20 minutes or until cooked when tested with a skewer. Stand in the pan for 5 minutes before transferring to a wire rack to cool completely.

For the frosting; beat cream cheese in the bowl of an electric mixer until smooth. Add the brown sugar and milk and beat until well combined. Refrigerate for 20 minutes. Dollop onto the centre of each cooled cupcake. Garnish with nuts, if using. Tip 1: Replace the dried dates with 1 cup chopped fresh dates when they are in season. Tip 2: Cupcakes will keep for 5 days in an airtight container lined with foil at room temperature. Tip 3: To serve as a dessert replace the frosting with warmed salted caramel sauce. Drizzle over the warm cakes and serve a dollop of thick cream.
