Cupcake Cones with Mascarpone Frosting

- 1/3 cup raw sugar
- 3/4 cup self-raising flour
- 250milliliter thickened cream
- 75grams butter
- 3tablespoons icing sugar
- 10 ice-cream wafer cups
- 1teaspoons vanilla extract
- 3 eggs
- 250grams mascarpone
- rainbow sprinkles, optional
Method
Step 1 of 4
Preheat oven to 180°C. Stand the wafer cups in a roasting pan.

Beat butter and sugar together until creamy and pale.
Step 3 of 4
Add eggs, one at a time, beating well after each addition. Add flour and vanilla and beat on low speed until the mixture has thickened. Spoon mixture into cups. Bake for 20-25 minutes or until golden and a skewer inserted in the centre of 1 cake comes out clean. Set aside to cool.
Step 4 of 4
To make the frosting, beat mascarpone with cream and icing sugar until smooth. Spread frosting over cupcakes and scatter with rainbow sprinkles.
