  • 1 3/4 cup self raising flour, sifted
  • full cream milk (for serving)
  • 125grams butter, softened
  • 2-4 drops gel food colouring red
  • 200grams milk chocolate bits
  • 2tablespoons cocoa powder
  • 200grams white melts
  • 1 egg
  • 3/4 cup brown sugar

Method

Step 1 of 7

Preheat oven to 170°C/150°C fan forced. Grease and line 2 baking trays with baking paper.

Using an electric mixer, beat WESTERN STAR CHEF’S CHOICE Butter and CSR Brown Sugar until pale and creamy, add egg; beat until just combined. Stir in WHITE WINGS flour, NESTLE BAKERS’ CHOICE Cocoa Powder & NESTLE BAKERS’ CHOICE Milk CHOC BITS. Mix until well combined.

Roll level tablespoons of mixture into balls; place 4cm apart on prepared trays; gently press down on cookies to flatten slightly. Bake for 15 minutes or until golden.

Remove cookies from oven, & while dough is still warm and soft, use a small sharp knife to make a small cut in the cookie, give the knife a little wiggle to open up the cut just a little, be careful here not to wiggle to much or you may tear the cookie in half. Leave on trays to cool completely.

Place NESTLE BAKERS’ CHOICE White Melts in a small microwaveable safe bowl; microwave uncovered on MEDIUM (50%) for 1 minute; stir. Repeat process in 30 second intervals until melted and smooth; add 1-2 drop of QUEEN Gel Food Colouring Red and stir to tint Melts pink.

Step 6 of 7

Use a spoon to dollop a little of the pink Melts on cookie and smooth over to cover the middle of the cookie, as pictured. Repeat with remaining cookies.

Step 7 of 7

Use black marker to make mouse faces on serving glasses. Gently slot two cookies over the edge of a serving glass, fill with milk, and serve.
