  • 1 cup pure icing sugar
  • 125grams butter, softened
  • 1teaspoons vanilla extract
  • 1teaspoons vanilla extract (for frosting)
  • 3teaspoons red food colouring
  • 1teaspoons baking soda
  • 150grams cream cheese, softened
  • 1/4 cup cocoa powder
  • 1/2 cup buttermilk
  • 1 egg
  • 1 cup brown sugar

Method

Step 1 of 6

Preheat oven to 190°C. Line 2 flat baking trays with baking paper.

Step 2 of 6

Beat butter, sugar, egg and vanilla in a small bowl with an electric mixer for 5 minutes until pale and creamy.

Step 3 of 6

Sift flour, cocoa, baking soda and baking powder together. Stir into butter mixture, in batches, alternating with buttermilk. Stir in red food colour.

Step 4 of 6

Drop level tablespoonfuls of batter onto trays leaving 5cm between each for spreading. Bake for about 8 minutes until puffed and set. Transfer to a wire rack to cool. Repeat with remaining mixture.

Meanwhile, prepare frosting: Beat cream cheese, butter and vanilla together until smooth and creamy. Add icing sugar and beat well until smooth.

Step 6 of 6

Spread frosting over half the whoopie pies. Sandwich with remaining halves, pressing on firmly but gently. Serve.
