  • 600milliliter thickened cream
  • 1 1/2 cup diced mango, puréed
  • ice-cream wafers
  • 125grams raspberries, puréed, sieved
  • 1teaspoons vanilla bean paste
  • 395grams sweetened condensed milk

Method

Step 1 of 3

Beat cream with condensed milk until thick. Divide 3 equal portions into separate bowls. Stir vanilla into one portion, raspberry into second portion and mango purée into the remaining portion.

Step 2 of 3

Line a 15cm deep square pan with a double layer of plastic. Line base with wafers, trimming to fit. Top with mango mixture. Freeze for 1 hour or until firm. Top with vanilla mixture and freeze for 1 hour. Finish with raspberry layer and top with wafers. Cover with plastic and freeze overnight until firm.

Step 3 of 3

To serve, dip base of pan into hot water to loosen. Lift out and turn onto a serving platter. Cut into thick slices and serve with raspberries.
