  • 300grams WW mini dark chocolate chips
  • 1 orange, zested
  • 120grams unsalted butter
  • 3/4 cup almond meal
  • 1/2 cup brown sugar
  • 1tablespoons almond spread
  • 1/3teaspoons salt
  • 1 egg, seperate out egg whites

Description

These almond lace biscuits with a chocolate orange centre make an irresistible gift. Don’t forget to make a few extras for you to enjoy!

Method

Step 1 of 11

Preheat the oven to 180C Fan Forced. Line a baking tray with baking paper.

Step 2 of 11

Melt the butter over medium-high heat in a medium saucepan.

Step 3 of 11

Add the brown sugar and whisk until the mixture comes to a rolling boil.

Step 4 of 11

Add the almond spread and whisk to combine.

Step 5 of 11

Add the almond flour, mix over low heat until it thickens.

Step 6 of 11

Remove from the heat and allow it to cool before mixing the egg white through. Stir until the mixture becomes thick and creamy in consistency.

Use a teaspoon to dollop the mixture on the baking tray. Leave enough room for the biscuits to spread.

Bake for 8 - 10 minutes, the edges will bubble a little and the colour becomes golden brown. Take them out of the oven, leave on the tray to cool for a few minutes before lifting them on to the cooling rack.

For the chocolate orange filling melt the choc bits in a bowl over a saucepan of boiling water until it becomes smooth and creamy.

Add the orange zest and give it a good stir to combine through the chocolate.

Add a dollop of chocolate to one side of a biscuit then pop another on top to 'sandwich' them together. Serve and enjoy
