- 300milliliter thickened cream
- white sugar (to sprinkle)
- 1tablespoons pure icing sugar
- 1tablespoons pure icing sugar (to dust)
- 1/2teaspoons vanilla extract
- 250grams strawberries
- 1 egg whites
- 1 shortbread mix
Method
Step 1 of 5
Make basic shortbread mix, replacing cornflour with almond meal.
Step 2 of 5
Preheat oven to 160°C. Line 2 baking trays with baking paper.
Step 3 of 5
Roll dough out between sheets of baking paper until 1cm thick. Using a 8cm fluted round biscuit cutter, cut 12 rounds from dough. Transfer biscuits to prepared trays. Brush with egg white and sprinkle with sugar (refer to basic shortbread mix recipe).

Bake for 20 minutes or until firm to the touch and light golden in colour. Cool on trays. Transfer to a wire rack.
Step 5 of 5
Beat cream with icing sugar and vanilla until soft peaks form. Top half of the biscuits with strawberry slices and cream and finish with another biscuit. Dust with extra icing sugar and serve. Note: Vanilla extract is different to vanilla essence.
