- 3 sheet frozen ready rolled puff pastry, partially thawed
- 1/4 cup white sugar
- 2tablespoons icing sugar
- 1 orange, rind finely grated and juiced
- 1/2teaspoons ground cinnamon
- 1tablespoons honey
- 150grams fresh ricotta
- 1 egg, whisked
- 2tablespoons natural almonds, finely chopped
- 1/4 cup sultanas

Method
Step 1 of 3
Preheat oven to 180°C. Line a large baking tray with baking paper.
Step 2 of 3
Combine ricotta, icing sugar, honey, juice, rind, cinnamon, almonds and sultanas in a bowl.
Step 3 of 3
Using a 10cm round biscuit cutter, cut 12 rounds from pastry. Spoon 1 tbs of mixture into the centre of each round. Brush edge of half of each round with egg. Fold pastry in half, enclosing filling, and press edges together. Place onto prepared baking tray. Brush with egg and sprinkle with sugar. Bake for 20 minutes or until golden and puffed. Serve warm.
