  • 1 1/4 cup almond meal
  • 1/4 cup plain flour
  • 1/4 cup sugar
  • 5 egg whites
  • 150grams unsalted butter
  • 1teaspoons vanilla extract
  • 400grams Woolworths frozen dragon fruit chunks

Method

Step 1 of 10

Defrost frozen dragon fruit chunks. Preheat oven to 180°C. Grease muffin tin.

Step 2 of 10

Melt butter in microwave. Cool it then stir in vanilla extract.

Step 3 of 10

Sieve flour then add almond meal and sugar. Flatten any lumps. Mix well.

Step 4 of 10

Add egg whites, butter and dragon fruit to the flour mixture. Mix well.

Step 5 of 10

Spoon the mixture into the muffin tin.

Step 6 of 10

Pop it in the oven for 6 minutes.

Step 7 of 10

Turn the heat down to 150°C then cook for another 16 minutes until cooked.

Step 8 of 10

Turn oven off. Leave the tin in the oven for another 4 minutes.

Step 9 of 10

Remove from oven. Leave them cool down.

Step 10 of 10

Optional - serve friands with whipped cream.
