- 1 lemon, rind finely grated
- 1 cup full cream ricotta
- 2 eggs
- 1/4 cup caster sugar

Method
Step 1 of 2
Sift plain flour and baking powder into a bowl. Whisk eggs, caster sugar, grated lemon or orange rind and vanilla extract together in a bowl until combined. Add ricotta and whisk in lightly until just combined.
Step 2 of 2
Heat vegetable oil in a medium saucepan over medium high heat. Drop heaped teaspoonfuls of mixture into oil and fry for about 2 minutes until golden and crisp. Remove with a slotted spoon and drain on paper towel. Dust with icing sugar and serve. Note: Vanilla extract is different to vanilla essence.
