- 45grams butter
- 5grams active yeast
- 50grams sugar
- 1 pinch salt
- 2 medium apple, cored and shredded
- 2/3 cup plant based milk, slightly warmed
- 2 medium eggs, cracked and seperated
- 4tablespoons cinnamon sugar

Description
This babka has the crunch of apple enhanced by the subtle cinnamon spicing.
Method
Step 1 of 6
Pre-heat the oven to 160°C. Dissolve the yeast in the warmed milk and 1 tsp of sugar. Stir until fully dissolved and set aside.
Step 2 of 6
Cream the butter together with the rest of the sugar in another mixing bowl. Mix in the yeast and and once its all combined fully, allow to sit for 2 hours covered.

Sprinkle some flour on a dry and clean counter top and roll out your dough as much as possible. Now evenly spread the cinnamon sugar over one side and then evenly sprinkle the shredded apple.
Step 4 of 6
Then roll the entire dough spread into 1 long roll. Twist the dough around a few times, then fold in half and plaid the 2 sticks together.

Place some baking paper into a suitable baking dish and place the babka. Lightly brush some egg whites over the top.
Step 6 of 6
Bake for 20 minutes, then turn the babka over, brush again with more egg whites and bake for another 20 minutes before serving.
