- 1.50kilograms bananas, diced
- 2teaspoons fresh ginger, grated
- 1 medium onion, chopped
- parsley (optional, to garnish)
- 1/4 cup lime juice
- 2teaspoons grated lime zest
- 500grams dates, chopped
- 4-6 japanese curry cubes (mild, medium or hot, depending on your taste preference)
- 2 cup apple cider vinegar
- 1 1/2 cup brown sugar, firmly packed
- 1 birds eye chilli
Method
Step 1 of 5
Combine bananas, dates, ginger, chilli, onion, lime zest, lime juice and apple cider vinegar in a large saucepan.
Step 2 of 5
Bring to the boil, simmer, uncovered, for approximately 20 minutes or until fruit is soft.
Step 3 of 5
Stir in sugar and curry powder, stir over heat, without boiling, until sugar has dissolved.
Step 4 of 5
Bring to the boil, simmer, uncovered, stirring occasionally, for approximately 20 minutes or until mixture is thick.
Step 5 of 5
Pour into hot sterilised jars. Seal when cool.
