  • 2teaspoons vanilla essence
  • 1 2/3 cup caster sugar
  • 3 cinnamon sticks
  • 12 apricots
  • 2teaspoons powdered gelatine
  • 1 orange rind
  • 3 cup almond milk

Method

Step 1 of 4

Stir almond milk, sugar and vanilla in a pan until boiling and sugar dissolves. Lower heat and simmer for 3 minutes.

Step 2 of 4

Meanwhile, stir 2 tablespoons boiling water and gelatine to dissolve. Cool for 5 minutes. Stir into milk mixture. Divide mixture between 6 serving glasses. Cover and chill for 4 hours.

Step 3 of 4

Stir 1 1/2 cups water, grated rind of an orange, orange juice, 1 cup extra caster sugar and cinnamon sticks together over heat until sugar dissolves.

Step 4 of 4

Cook apricots for 5 minutes until soft. Leave to cool. Serve. Refer to image.
