  • 250grams roasted turkey breast, sliced
  • 100grams cranberry sauce
  • 1/4 cup extra virgin olive oil
  • 100grams cheddar cheese, grated
  • 100grams brie, sliced
  • 250grams frozen chopped spinach, thawed and squeezed
  • 500grams wholemeal self-raising flour
  • 400milliliter buttermilk
  • 2 egg yolks
  • 1teaspoons fine salt

Method

Step 1 of 3

Preheat oven to 170°C. Combine the flour and salt in a large bowl, the mix in the olive oil and yolks. Add the buttermilk and stir to make a dough.

Step 2 of 3

On a lightly-floured board roll out the dough to a 40x20cm rectangle. Spread with cranberry sauce, scatter on the spinach, then arrange the turkey and brie on top. Roll up tightly, then slice into twelve pieces.

Step 3 of 3

Arrange on baking paper lined oven trays, cut side down and bake for 15 minutes. Scatter with cheddar and bake for a further 10 minutes.
