  • 1 cup mixed dried fruit
  • 1/2 cup pure icing sugar
  • 80grams unsalted butter
  • 1teaspoons vanilla extract
  • 1 cup almond meal
  • 1/2 cup buttermilk
  • 3 eggs
  • 1/2 cup brown sugar, firmly packed
  • 1 1/2 cup gluten free self-raising flour

Method

Step 1 of 4

Preheat oven to 180°C. Line a 12-hole medium muffin tin with paper cases.

Step 2 of 4

Combine flour, almond meal, mixed fruit, sugar and spice in to a large bowl. Whisk eggs, butter, buttermilk and vanilla together in a jug. Stir into dry mixture until just combined.

Step 3 of 4

Divide between cases. Bake for 20 minutes until golden and a skewer inserted into centre comes out clean. Transfer to a wire rack to cool.

Step 4 of 4

Meanwhile, place icing sugar in a bowl. Mix in 1-2 tsp of water until a smooth, thick paste forms. Place icing in a piping bag and pipe a cross onto the top of each muffin. Set muffins aside until icing sets.
