  • 1 egg
  • 1 cup tri-colour quinoa, cooked
  • 1/2 cup macadamias, chopped
  • 1/4 cup macadamia oil

Method

Step 1 of 3

Preheat oven to 180°C. Line a 12-hole medium muffin pan with paper cases. Combine flour and baking powder in a bowl. Add the quinoa and sugar and stir to combine.

Step 2 of 3

Peel, quarter and core pears. Finely chop 1 pear and slice remaining pear.

Step 3 of 3

Lightly whisk egg, oil and milk in a separate bowl. Stir into flour mixture along with chopped pear and macadamias. Divide mixture among muffin holes. Top with pear slices. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Serve warm or at room temperature.
