  • 1teaspoons mixed spice
  • 100grams butter, chopped
  • 200grams dates, chopped
  • 1 orange rind, finely grated
  • 1/2 cup orange juice
  • 2tablespoons golden syrup
  • 1/2 cup LSA
  • 250grams Greek yoghurt
  • 2 cup self-raising flour
  • 2 eggs, whisked
  • 1/2 cup pepitas

Method

Step 1 of 3

Preheat oven to 200°C. Line a 12-hole muffin tin with paper cases.

Step 2 of 3

Place date, butter, 1/2 cup of water, syrup, orange rind and 1/2 cup of orange juice in a small saucepan. Stir over medium heat until butter has melted. Remove from heat and cool for 5 minutes.

Step 3 of 3

Combine flour, LSA and mixed spice in a large bowl. Whisk eggs and yoghurt together until smooth. Stir date mixture and yoghurt mixture into flour until just combined. Spoon into paper cases and sprinkle with pepitas. Cook for 20-25 minutes until golden.
