- 150grams medjool dates, pitted, chopped
- 1/2 cup shredded coconut
- 1/4 cup tahini
- 1/4 cup sunflower seeds
- 1 cup puffed rice
- 1 cup rolled oats
- 1/4 cup almonds, toasted, chopped
- 2tablespoons coconut oil, melted
- 1/4 cup dried fruit, chopped

Method
Step 1 of 3
Line a baking tray with baking paper. Process dates and 2 tbs boiling water in a food processor until it forms a paste. Add tahini and coconut oil and process until smooth.
Step 2 of 3
Combine remaining ingredients in a large bowl. Add date purée and mix together until combined.
Step 3 of 3
Roll mixture into balls and place on prepared tray. Chill for 30 minutes or until firm. Tip 1: These can be stored in an airtight container in the fridge for up to 2 weeks. Tip 2: If your school has a nut-free policy, omit the almonds from this recipe, or keep the treats as a quick, after-school snack only.
