  • 1 cup apple sauce (chilled)
  • 1/4 cup vegetable oil

Description

Mouthwatering oat bran muffins, naturally sweetened with dates and apple sauce, try this easy muffin recipe for a healthier snack to satisfy your sweet tooth.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Line a 12-hole, 1/3-cup capacity muffin pan with paper cases.

Step 2 of 4

Place dates in a heatproof bowl and cover with the boiling water. Stand for 15 minutes, then drain.

Step 3 of 4

Place oat bran, flour, sugar, baking powder, bicarbonate of soda and salt in a blender. Blend until combined. Add eggs, sauce, oil and dates, then blend to combine.

Step 4 of 4

Divide mixture among holes. Stand for 10 minutes. Bake for 15 minutes or until golden and a skewer inserted into centres comes out clean. Cool for 10 mins. Serve muffins warm or at room temperature.
