- 250grams fresh dates, pitted, chopped
- 3/4 cup shredded coconut
- 1 cup self-raising flour
- 1/2 cup coconut flakes
- 2/3 cup vegetable oil
- 1 cup rolled oats
- 1/2 cup firmly packed brown sugar
- 1/2 cup almond kernels, chopped

Method
Step 1 of 4
Preheat oven to 180°C. Line a 20x30cm slice pan with baking paper, extending paper over all sides.

Combine oats, flour, sugar and 1/2 cup shredded coconut in a bowl. Stir in oil. Mix well to combine. Press mixture over base of prepared pan. Bake for 15 minutes. Stand for 20 minutes to cool.

Meanwhile, place dates and 1 cup water in a medium saucepan. Bring to the boil over medium-high heat. Boil, uncovered, for 5 minutes or until water has almost evaporated. Remove from heat. Beat with a wooden spoon until smooth. Cool for 5 minutes.
Step 4 of 4
Spread date mixture over base. Scatter with almonds, coconut flakes and remaining shredded coconut. Bake for 30 minutes. Cool completely in pan. Cut into 16 bars. Serve.
