- 65grams dried cherries, chopped
- 170grams honey
- 120grams almond butter, light, runny
- 2teaspoons cinnamon
- 2tablespoons coconut oil

Description
Popcorn makes an appearance at breakfast as a wholegrain element in these delightfully different granola bars.
Method
Step 1 of 4
Line a square baking tray with parchment paper. In a large bowl, crush the popcorn by hand or place in a Ziplock bag and crush with a rolling pin. Add the nuts, oats and dried cherries and set aside.
Step 2 of 4
In a medium saucepan, warm the honey, almond butter, coconut oil and cinnamon over a medium heat for 2-3 minutes.
Step 3 of 4
Pour the almond butter mixture over the dry ingredients and mix well to coat. Pour the mix into the lined baking tin and press in to form an even, tightly packed layer.
Step 4 of 4
Place in the fridge for 1 hour to firm up, then slice into 9 squares.
