- 20grams pomegranate, seeds only
- 1teaspoons vanilla extract
- 1 large eggs, yolk only
- 2 large grapefruit, zest from 2 and juice from 1 only (to garnish)
- 20grams caster sugar (to garnish)
- 1tablespoons canola oil (for greasing)

Description
These muffins have a surprising sour zesty flavour that is well balanced.
Method
Step 1 of 5
Pre-heat the oven to 180°C. In a mixing bowl, combine the grapefruit zest from 1 grapefruit and caster sugar fully and leave to one side to garnish.
Step 2 of 5
In a separate mixing bowl, combine the sugar and butter until it become fluffy. Add the egg yolk and ensure its combined fully.
Step 3 of 5
Add the vanilla, pomegranate juice and the juice and zest from 1 grapefruit and mix.

In another bowl, combine all the dry ingredients and then incrementally combine them into the mixing bowl.
Step 5 of 5
Lightly line some muffin tins with the canola oil and then add the dough evenly to the tins. Bake in the oven for 25 minutes and then garnish with the sugared zest.
