  • 3/4 cup icing sugar mixture
  • 200grams cream cheese, soft
  • 1teaspoons vanilla extract
  • 50grams unsalted butter, soft
  • 1 1/2 cups sweet potato, grated
  • 1teaspoons vanilla extract
  • 1 large egg
  • 2 1/2 cups flour, sifted
  • 1 cup buttermilk
  • 1 1/2teaspoons mixed spice, sifted
  • 3/4 cup brown sugar
  • 1 cup vegetable oil

Deliciously soft and moist muffins with a divine frosting

Method

Step 1 of 7

Gather all ingredients.....add muffin papers to trays and set aside....preheat fan forced oven to 160 degrees.

Step 2 of 7

Add flour, spice, sugar to a large bowl and combine, add in sweet potato and mix again....make a well in the centre.

Step 3 of 7

Whisk egg in a large jug, then add oil, buttermilk and vanilla and mix to combine, pour this into the dry ingredients....mix with a wooden spoon only until combined.

Step 4 of 7

Spoon batter into prepared muffin papers evenly.

Step 5 of 7

Bake for around 25 minutes (each oven is different) or until a skewer comes out clean....remove and cool in the trays for a couple of minutes before cooling completely on cooling racks.

Step 6 of 7

Frosting directions...add all ingredients in a medium bowl and beat until well combined and smooth, spread evenly over each muffin.
