- 2 red capsicum
- 100grams low fat danish style feta
- 1tablespoons extra virgin olive oil
- 1teaspoons sweet paprika
- pinch salt + pepper
Description
A yummy homemade dip. A good way to use up capsicums in your fridge that are starting to look a little sad.

Method
Step 1 of 4
Line a baking tray with baking paper and place the capsicums on to it. Drizzle with extra virgin olive oil and put in a preheated oven at 180° for roughly 40 minutes (until the skin starts to burn and the capsicums have sunk.)
Step 2 of 4
Using tongs (so you don't burn yourself) carefully remove the skin while it's still hot. Remove the stem and scoop out the seeds. Roughly chop and put into a blender or food processor of choice (I used a pull chopper.)
Step 3 of 4
Pulse a few times before adding the salt, pepper, paprika. Make sure the capsicum has cooled almost to room temp before adding the roughly chopped feta. Pulse again until you reach desired consistency, for a chunky dip (how I like it) it will only need a few pulses.
Step 4 of 4
Serve with brown rice crackers, or crackers or vegetables of choice.
