  • 2tablespoons maple syrup
  • 1/2 cup rolled oats
  • 1/4 cup olive oil-based spread
  • 1/2 cup wholemeal self-raising flour
  • 2 free range eggs
  • 150grams Medjool dates (pitted)
  • 500grams whole cooked beetroot

Method

Step 1 of 3

Preheat oven to 180°C. Line a 20cm square baking pan with baking paper.

Step 2 of 3

Place beetroot, Medjool dates, oats, flour, eggs, spread and maple syrup in a processor and process until fairly smooth.

Step 3 of 3

Transfer to pan. Bake for 40 minutes or until cooked. Cool. Cut into squares.
