  • 1 1/2 cup self raising flour
  • 300milliliter thickened cream
  • 125grams butter, soft
  • 1teaspoons vanilla extract
  • 1/2 cup light sour cream
  • 200grams dark cooking chocolate
  • 1/4 cup cocoa
  • 2 eggs
  • 3/4 cup sugar
  • 300grams beetroot, grated

Method

Step 1 of 5

Preheat oven to 180°C. Grease and line 6 ramekins.

Step 2 of 5

Beat butter, caster sugar and vanilla extract until creamy.

Step 3 of 5

Add eggs, beating well after each addition. Fold in 11/2 cups self-raising flour, cocoa, light sour cream and grated beetroot.

Step 4 of 5

Spoon into dishes. Place in a roasting pan. Pour in hot water halfway up sides. Bake for 35-40 minutes or until cooked. Stand for 5 minutes.

Step 5 of 5

Stir thickened cream and dark cooking chocolate in a bowl over simmering water until smooth. Turn out puddings and serve with chocolate sauce. Note: Melt chocolate over boiling simmering water, whilst stirring. Remember, vanilla extract is different to vanilla essence
