Chocolate-Coated Honeycomb Bites

- 200grams dark chocolate, melted, cooled
- 1 1/2teaspoons bicarbonate of soda
- 1/2 cup honey
- 1/4 cup roasted salted peanuts, chopped
- 1 cup caster sugar
- 2tablespoons coconut oil, melted

Grease a 22cm square cake pan and line with baking paper, leaving sides overhanging.

Place sugar, honey and 1/4 cup water in a large, deep saucepan over medium-low heat and stir to dissolve sugar. Increase heat to high and bring mixture to the boil. Cook, without stirring, for 5 minutes or until deep golden. Remove from heat and allow bubbles to subside.

Working quickly, add bicarboate of soda, stirring with a wooden spoon to combine. Pour into pan. Set aside to cool completely. Break into 3cm pieces. Combine chocolate and coconut oil. Dip honeycomb pieces into chocolate to half cover. Place on a wire rack set over a tray. Scatter with nuts. Leave to set. Store in a sealed container and keep in a cool place. Best eaten within a few days.
