- 1/2 cup thickened cream
- 2tablespoons white sugar
- 20grams butter
- 1teaspoons vanilla extract
- 8 frozen waffles, toasted
- 125grams fresh blueberries (or frozen blueberries)
- 2teaspoons ground cinnamon
- 1/2 cup thickened cream, whipped (to serve)
- 2 free range eggs
- 1/3 cup caster sugar

Method
Step 1 of 4
Roughly chop waffles and set aside. Whisk eggs, caster sugar, vanilla and cream in a large bowl until well combined. Add blueberries and waffles and gently combine.

Melt butter in a 16cm (base measurement) frying pan over low heat. Brush butter evenly over base and sides of pan. Pour waffle mixture into fry pan. Use a large metal spoon to press mixture into the pan. Cover and cook for 10 minutes or until almost set.
Step 3 of 4
Preheat grill on medium heat. Combine white sugar and cinnamon and sprinkle over top of pudding in pan. Place the pan under the grill for 3 minutes until the centre is set and sugar crystalised.
Step 4 of 4
Spoon the pudding evenly among serving bowls and serve warm with cream.
