Pears In Maple Caramel Sauce With Toffee

- 1/2 cup double cream (to serve)
- 2 cinnamon sticks
- 4 pears
- 4 cardamon pods, bruised
- 1/2 cup maple syrup
- 1 cup caster sugar
- 1/4 cup pistachios, finely chopped
- 1 cup fresh orange juice

Combine maple syrup, orange juice, cinnamon and cardamom in a deep saucepan. Bring to the boil over medium heat. Peel pears and using an apple corer, remove cores from base of pears, leaving stalks intact. Add pears to pan and cook, covered, for 35 minutes, turning occasionally, until tender.

Meanwhile, line a baking tray with baking paper. Spread pistachios on the prepared tray in a single layer. In a small saucepan over medium heat, stir sugar and 2 tbs water together until sugar dissolves. Bring to the boil and cook without stirring for 6 minutes or until golden brown. Pour toffee over pistachios and set aside to cool and set. Break into shards.

Transfer pears to a plate and increase heat to medium high. Simmer syrup for 15 minutes or until reduced by two-thirds and thickened. Serve pears with sauce, cream and toffee shards.
