  • 100grams dates, pitted, finely chopped
  • 2 cup self-raising flour
  • 40grams butter, chopped
  • 1 green apple, peeled, cored, finely chopped
  • 1teaspoons ground cinnamon
  • 2tablespoons maple syrup
  • 2tablespoons white miso paste
  • 1 cup buttermilk
  • 2tablespoons caster sugar

Method

Step 1 of 6

Preheat oven to 220°C. Line a 20x30cm baking pan with baking paper.

Step 2 of 6

Combine date and apple in a bowl. Combine miso and cinnamon in a separate bowl, stirring until smooth.

Step 3 of 6

Combine flour and sugar in another bowl. Add butter and rub in using your fingertips until like breadcrumbs. Make a well in the flour mixture. Add buttermilk and, using a spatula, mix quickly to a soft, sticky dough.

Turn onto a lightly floured surface and knead gently. Roll out to 25x20cm rectangle about 2cm thick.

Leaving a 3cm edge along the long side furthest from you, spread miso mixture over dough. Scatter date and apple mix over, pressing into the dough. Roll up tightly from long side closest to you. Trim ends, then cut log into 12 x 2cm-thick slices.

Place slices into pan, cut-side up and close together. Bake for 18-20 minutes, until scrolls are golden. Transfer to a wire rack and drizzle with syrup. Serve warm.
