  • 125grams butter (at room temperature)
  • 125grams caster sugar
  • 2 large eggs
  • 175grams self-raising flour, sifted
  • 2 Bramley apples, peeled, cored and roughly chopped
  • 250grams blackberries
  • 2tablespoons caster sugar
  • 2teaspoons icing sugar (to dust)

Method

Step 1 of 3

Preheat the oven to 180°C (Gas 4). In a bowl, mix the butter and sugar together with an electric hand whisk or mixer until pale and creamy. Beat in the eggs one at a time, adding 1 tablespoon of the flour after each egg. Mix in the remaining flour and set aside. Put the apple and blackberries in the ovenproof freezerproof dish, then stir in the caster sugar along with 2 tablespoons cold water. Spoon the sponge mixture over the top, and smooth the surface.

Bake for 50 minutes, or until golden brown and firm to the touch - a skewer inserted into the sponge should come out clean. Leave to cool completely, then wrap in foil, and freeze.

To serve, defrost in the refrigerator overnight, then warm through in an oven preheated to 180°C (Gas 4) for about 30 minutes, or until hot. Dust with icing sugar (if using), before serving.
