10 Ingredients

  • 1/2 cup dates, chopped
  • 1/2 cup thickened cream
  • 1/4 cup icing sugar
  • 80grams dark chocolate, grated
  • 1 orange rind, grated
  • 350grams double layer unfilled sponge cake
  • 2tablespoons cocoa (to dust)
  • 1/3 cup brandy
  • 1/2 cup ricotta cheese
  • 100grams slivered almonds

Method

Step 1 of 4

Place ricotta, cream and icing sugar into a bowl and beat with electric hand beaters until thick. Fold in dates, almonds, chocolate and orange rind.

Step 2 of 4

Place a sheet of plastic wrap onto a clean bench top and then a second sheet on top to form a cross. Slice one layer of the cake into three and brush cut sides with brandy. Place the base of the cake into the centre of the plastic.

Step 3 of 4

Spoon over half the cream mixture and spread out evenly. Brush both sides of the centre layer with brandy and position on top of the filling. Spread remaining filling over cake. Brush cut the side of the final cake layer with brandy and place on top of cake.

Step 4 of 4

Bring the plastic wrap up and fold over the top to seal. Place onto a plate and refrigerate for 2 hours or overnight. To serve, remove plastic wrap and dust with cocoa.
