- 2tablespoons black chia seeds
- 1/3 cup buttermilk
- 3/4 cup rice bran oil
- 2 eggs, lightly beaten
- 1/2 cup brown sugar
- 1tablespoons brown sugar, extra

Method
Step 1 of 4
Preheat oven to 180°C. Grease a 12-hole medium muffin pan.
Step 2 of 4
Combine flour, oats, sugar, chia seeds and sultanas in a bowl.
Step 3 of 4
Combine eggs, apple, buttermilk and oil in a separate bowl. Fold into flour mixture. Divide among muffin holes.
Step 4 of 4
Combine extra sugar and cinnamon and sprinkle over muffins. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Serve warm or at room temperature.
