  • 1/2 cup cashews
  • 450grams dates, pitted
  • 1/4 cup chia seeds
  • 1/2 cup quinoa flakes

Method

Step 1 of 3

Place pecans, cashews, quinoa flakes, chia seeds, cocoa powder and vanilla extract in a food processor and process until finely chopped. With the motor running, add pitted dates, a few at a time, until mixture starts to come together.

Step 2 of 3

Turn out onto benchtop and using clean hands, bring together completely, adding cold water. Press mixture into a 16x26cm baking paper lined tin. Smooth surface with the back of a metal spoon. Cover and refrigerate until firm.

Step 3 of 3

Dust with cocoa powder. Cut into pieces. Serve.
