  • pinch salt
  • 1 cup almond meal
  • 1teaspoons vanilla essence
  • 4 large eggs

Description

A flourless cupcake that is light and fluffy with the secret ingredient of cannellini beans.

Method

Step 1 of 7

Before serving dust with icing sugar. Enjoy!

Step 2 of 7

Preheat oven to 180 Celsius.

Step 3 of 7

Line a 12 cupcake baking tin with cupcake liners. Set aside.

Step 4 of 7

In a food processor add cannellini beans, vanilla essence, salt and raw sugar, process for 5 minutes or until you get a smooth consistency. Then add eggs and process for a further 2 minutes until well combined.

Step 5 of 7

In a stainless steel bowl transfer mixture and add almond meal. Fold in gently until well combined.

Step 6 of 7

Divide batter into the 12 cupcake lined tin and bake for 20 minutes or until skewer comes out clean.

Step 7 of 7

Remove from oven let cool in tin for 10 minutes until transferring to cooling rack.
