- 1teaspoons ground cinnamon
- 1teaspoons orange, rind finely grated
- 3/4 cup craisins
- 1 1/4 cup almond meal
- 1/3 cup sunflower oil
- 3 eggs
- 1 cup quinoa flakes
- 3/4 cup gluten free self-raising flour
- 1/2 cup organic honey

Method
Step 1 of 4
Preheat oven to 180°C. Lightly grease 20 x 30cm baking tin and line base with baking paper, allowing it to overhang on the long sides.

Combine quinoa flakes, almond meal, gluten free self-raising flour and cinnamon in a large mixing bowl. Stir in dried cranberries and orange rind.
Step 3 of 4
Place eggs, organic honey, sunflower oil and vanilla extract in a second bowl. Whisk to combine. Stir wet ingredients to dry ingredients to combine. Pour mixture into prepared tin and smooth surface. Bake for 20 minutes, or until golden and a skewer inserted in to the centre comes out clean.

Set aside to cool for 5 minutes, then remove from tin using paper handles and set aside on a wire rack to cool completely. Cut into squares. Dust with pure icing sugar. Serve.
