  • 1tablespoons plain flour
  • 1/2 cup icing sugar, sifted
  • 50grams unsalted butter, melted
  • 2 egg whites, lightly whisked

Method

Step 1 of 2

Preheat oven to 180°C. Line a baking tray with baking paper. Combine desiccated coconut, icing sugar and plain flour in a bowl.

Step 2 of 2

Add egg whites and melted unsalted butter. Drop teaspoonfuls onto the tray and spread to 7cm rounds. Bake for 5-7 minutes until pale golden around the edges. Lift off tray, lay over a rolling pan and leave to cool and shape.
