- 1/4teaspoons peppermint extract
- 150grams choc-chip biscuits
- 1/4 cup honey
- 250grams spreadable cream cheese
- 1 1/2tablespoons cocoa powder
- 3/4 cup dark chocolate bits (save 1/4 cup, to decorate)
- 3/4 cup quinoa flakes
- 1/2 cup coconut oil

Method
Step 1 of 6
Line a 18x28cm slice pan with baking paper, allowing the sides to overhang.
Step 2 of 6
Process biscuits in a food processor until fine crumbs form. Transfer to a bowl and stir in quinoa flakes.

Combine coconut oil, chocolate and cocoa powder in a small saucepan. Stir over low heat until smooth. Combine with biscuit mixture, then spread evenly into slice pan, pressing down. Chill in the refrigerator for 30 minutes or until set.

Meanwhile, combine cream cheese, honey and peppermint, stirring well until smooth. Set aside.

Melt extra oil and extra chocolate together in a small pan until smooth.
Step 6 of 6
Spread cream cheese mixture evenly over base. Drizzle over chocolate. Chill for at least 1 hour or until set. Lift out using paper and cut into squares.
