  • 250grams Woolworths beetroot vac sealed
  • 3 eggs, separated
  • 1 cup caster sugar
  • 2teaspoons vanilla extract
  • 1 cup self raising flour
  • 1/2 cup cocoa
  • 170grams butter, melted
  • 300grams dark chocolate, melted

Description

A really moist delicious chocolate cake. You'd never know there's beetroot in there.

Prepare to eat more than one slice.

Method

Step 1 of 12

Remove the cooked beetroot from its packet and drain. Chop in processor until almost a purée. Set aside.

Step 2 of 12

Add the egg yolks and sugar to the processor and mix til pale. Add vanilla extract and mix again.

Step 3 of 12

Add the flour and cocoa and mix.

Step 4 of 12

Add the melted butter and mix.

Step 5 of 12

Add the beetroot purée to the mix and process til smooth.

Step 6 of 12

Melt the chocolate in the microwave until smooth.

Add the chocolate to the cake mix and process.

Step 8 of 12

Beat the egg whites until soft peaks form.

Step 9 of 12

Add the whites to the cake mix with a spatula

Step 10 of 12

Add to a greased cake pan and bake at 180 degrees for one hour.

Remove from cake pan and cool.

Tip: I iced my cake but a sprinkle with icing sugar or cocoa to hide any imperfections in the cake would be enough.
