- 7grams dried yeast
- 3 1/3 cup plain flour
- 80grams butter, melted (plus 60g extra butter for apple filling)
- 1 cup milk, warm
- 3 red apples, cored, diced
- 1teaspoons ground cinnamon
- 175grams thick custard
- 1 egg, lightly whisked
- 1/4 cup caster sugar (plus 1/3 cup caster sugar extra for apple filling)
- 1/2 cup sultanas (for apple filling)
- 2teaspoons sea salt

Method
Step 1 of 7
Combine milk, yeast and 2 tsp caster sugar in a jug. Set aside for 5 minutes until frothy.
Step 2 of 7
Combine flour, sea salt and remaining sugar in a large bowl. Make a well in the centre. Add yeast mixture, melted butter and egg and mix to form a dough. Turn onto a lightly floured surface and knead for 5 minutes until smooth.

Place dough in a greased bowl. Cover with plastic and a tea towel and leave in a warm place for 30 minutes until double in size.

Meanwhile, to make the filling, heat butter in a pan over medium heat. Add apple, sultanas, sugar and cinnamon and cook for 6-8 minutes or until softened. Leave to cool.

Turn out dough on a lightly floured surface. Roll out to a 30x42cm rectangle, with the long side closest to you. Spread with custard. Scatter over the apple mixture. Roll up the dough, from the long side. Cut the roll into 10 even pieces.

Grease a baking pan large enough for all 10 pieces. Arrange them, cut-side up, in the pan. Cover with plastic and leave in a warm place for 30 minutes.

Preheat oven to 200°C. Bake for 25-30 minutes or until golden brown. Drizzle with pink icing to serve (see tip).
