Method

Step 1 of 3

Beat half the butter, sugar and vanilla until pale and creamy. Add egg and beat until combined. Sift flour and cocoa together, add to mixture with almond meal and stir until a smooth dough forms. Divide in half and shape into discs. Enclose in plastic wrap and chill for 30 minutes until firm.

Step 2 of 3

Preheat oven to 180°C. Line 2 large baking trays with baking paper. Roll out 1 dough portion between baking paper until 3mm thick. Use a 5cm fluted round cutter to cut 20 rounds. Place on trays. Bake for 20 minutes. Transfer to a wire rack to cool. Repeat with remaining dough.

Step 3 of 3

Meanwhile, beat remaining butter until pale and creamy. Gradually beat in icing sugar until smooth. Beat in essence, colour and chocolate. Sandwich biscuits with mint filling. Serve or store in an airtight container for up to 5 days.
